In the Jura region, much is made of the vin jaune wines, those aged in barrel under a layer of yeast, not entirely dissimilar to the technique used in Jerez to make Sherry. While it may be the most traditional means of vinification in a region defined by its commitment to heritage, some producers are seeking out alternative techniques. The most prominent of these is the ouillé technique - which just so happens to be standard practice almost everywhere else in the world of wine - where wines are topped up in the barrel as they evaporate to prevent oxidisation. Mickaël Crinquand produces an astoundingly good iteration from his family's multi-generation winery, full of citrus fruit, minerality, and nuances of white flowers.
