Cabernet Noir is one of the most unique and rare varieties grown in the UK. Officially known as Cabaret Noir, this is a disease-resistant, Swiss-bred hybrid grape (Cabernet Sauvignon x unknown partner) developed by Valentin Blattner.
Grapes were sourced from Redhill Vineyard in Kent, hand harvested, brought to the London Cru cellar in Fulham and 100% destemmed before being pressed and fermented in a stainless steel tank. Once fermented, the wine was then aged in 3rd-use French oak barrels for 9 months. Bottled by hand in 2020, the wine has been cellar-aged for more than five years before release. During this extended ageing in bottle, the wine has developed complex spicy notes of cloves, dried violets, bramble and cured meat, reminiscent of mature Loire Cabernet Franc or Northern Rhone Syrah. On the palate it's complex and layered, with a generous, fleshy body, unusual in English red wine.
Very 'autumnal' in character, it pairs well with mushroom-based preparations, venison or mature hard cheese.
