Ratafia de Champagne is a liqueur produced in the style of a mistelle, where unfermented Champagne is fortified with Marc de Champagne, a distillate produced from the solids left from pressing. While most producers use leftover skins from low quality grapes for their ratafia, Francis Egly opts to use 100% Grand Cru, perfectly ripe Pinot Noir grapes. The result is a stunningly pure and intense expression of ratafia that outclasses its competitors by strides. Incredible on its own, over ice, with soda, or used in place of crème de cassis, this is a wonderfully versatile liqueur which will stay good in the fridge for months after opening.
