Note de Bianco is Alessandro Viola's flagship white, a crowd-pleasing, fruit-forward, textural, and refreshingly crisp iteration of Grillo, one of Sicily's most celebrated white varieties. Farmed organically and produced in a minimal intervention manner by Sicily's holistic guru, the fruit for this cuvée was grown near the sea at an elevation of 250m, retaining all fruit's lovely vitality and fruity delight. Joyful, fresh, and lifted by a citrusy and salty finish, this is an extremely drinkable and dangerously delicious white.
On the palate, rustically herbaceous with notes of green pear and that ever-present Sicilian salinity. Lovely touches of pear skin bitters and attractive acidity lead the way to a citrussy finish.
Wonderful as an apéritif, you might consider pairing this white with your seafood of choice. We recommend grilled octopus in olive oil and garlic.
