Maddam Biere Fine de Chablis
Founded in 2016 by cousins Alexis and Vianney Madelin, both born and raised in Burgundy, Maddam produces a small range of beers in Chablis using exclusively organic, high-quality local ingredients. While wine may dominate this historic corner of France, Burgundy is also one of the country’s leading cereal-growing regions. Every bit of barley and wheat used at Maddam is sourced from organic farms in Burgundy, each of which is meticulously selected by Alexis and Vianney for the surpassing quality of their crop. Spring water forms the base of every beer, while hops and botanicals undergo an equally strict selection process.
Their connection to this historic wine region inspires everything they do and is evident in their choice to age some of their beers in French oak barrels previously used for Chablis or red Burgundy. Each beer is bottled unfiltered and unpasteurised, preserving texture, energy and aromatic complexity, and is thoughtfully crafted to shine alongside food - much like a good wine.
