Les Enseignères is the most acclaimed climat for producing village-level white wines in Puligny-Montrachet. It owes its popularity to its exceptional geographic situation and geology, similar to the neighbouring Bâtard-Montrachet and Bienvenues-Bâtard-Montrachet. It is planted amongst clay-limestone soils with an average vine age of 65 years. Defined by its natural tension, power, and depth, notes of white peach and pear convey a pure expression of the Puligny-Montrachet appellation.
Vigneron and winemaker Romaric Chavy began formal wine training in his native Burgundy aged just 12. Over the subsequent three decades, the prodigy has mastered his craft, using the lutte raisonee methodology to achieve his pursuit of ultimate terroir definition.
Reflective of Romaric’s self, the bottlings crafted at Domaine Chavy-Chouet are full of the same personality, sensitivity, and uncompromising character that define their creator.
