Most wine fans associate the Palomino grape with its most famous derivative, Sherry. However, an increasing number of producers in the variety's native Andalucía region are using the grape to craft superbly dry and refreshing whites. This example, produced by father-son duo Willy and Luis Pérez, is structured and wonderfully intense, with aromas of tropical fruit, fresh apple and pear, and a long finish.
92/100 - The 2022 El Muelle de Olaso is their lightest of the whites. It's pure Palomino with little effect from the aging in bota, cropped from their warmest vintage ever. It fermented 80% in stainless steel and 20% in bota after being sun dried for a few hours. The two wines were blended and matured in stainless steel for six months. It has 13.5% alcohol and 4.65 grams of acidity and a bone-dry finish. It has some honeyed notes, hints of caramel, wide and powerful, with a palate that is reminiscent of a Sherry. It has the taste of the esparto grass and the chalky soils. A real bargain. 42,000 bottles and 150 magnums produced. It was bottled in February 2023. - Luis Gutiérrez, Wine Advocate

On the palate, silky and fresh with flavours of apple, peach and dried flowers. A lightly savoury touch is also perceptible, with hints of almonds and a long, mineral finish.
Best enjoyed after a year or two in bottle, drink this wine now-2029.
