Récolte Blanche is a stunning sparkling wine, crafted entirely from Chardonnay by Grower Champagne icon Davy Dosnon. Sourced from 25-year-old vines planted amongst a number of sites in the Côtes de Bar, the vines grew in soil remarkably similar to that of Chablis, infusing this cuvée with a distinctly Burgundian touch. Fermented for ten months in used Puligny-Montrachet barrels, the wine aged sur lies for a further twenty-four months in bottle. Very similar to a white Burgundy but with the added touch of bubbles, this is a powerful, rich and complex Champagne with an entirely unique character. Expect fresh and fruity notes of white and yellow fruits with lovely concentration and a subtle floral touch. Perfect as an accompaniment or for pairing alongside a range of light cuisine.
On the palate, it is fresh and elegant, developing in intensity and juciness as time goes on. Well-structured with serious yet fine tannins and a delicate perlage, flavours of lemon, grapefruit and brioche dance across the palate. Hints of lime zest and smoke lead to a long, lingering finish defined by an intense minerality.
