The Morin family has farmed around Bué - one of Sancerre’s most distinguished villages - for generations, gradually expanding the estate from 1.5 hectares to 10 hectares of biodynamically farmed vines on some of the finest sites in the region.
This cuvée is the domaine's introductory cuvée, made with estate-grown fruit from three different villages around the appellation - Bué, Sancerre itself, and Sury-en-Vaux.
The wine is quintessentially Sancerre: supple and mineral-infused, yet bursting with vibrant citrus and green fruit notes. Less obviously grassy thanks to low yields and perfectly ripe grapes, yet retaining that dry mouthfeel and tension we love in a great Sancerre.
Grapes are gently whole-bunch pressed, fermented with native yeasts and raised in stainless-steel tanks for 6-12 months, depending on the parcel. Unfined and only coarsely filtered to retain texture.
