Every now and then, we get the chance to delve into Carl Koch's cellar of rare back vintages — a place where the nervy, electric tension of young Riesling quietly transforms into something altogether more profound and moreish.
Since 2000, this Auslese has rested undisturbed in Koch’s 19th-century underground cellars, slowly evolving into an amber-hued marvel, layered with dried apricot, mandarin peel, beeswax and saffron, all carried by a vibrant acidity that balances its gentle sweetness with effortless poise.
Just a heads-up: as with many old bottles, the cork might be a bit tricky pull out. We suggest using a butler's thief or Durand wine opener, for a smoother opening. If the cork does break, don't worry. Just pour the wine through a fine mesh strainer into a decanter to catch any cork bits.
Enjoy it with cheese, fruit-based desserts or just on its own.
