Davy Dosnon is one of the finest vignerons in the Grower Champagne movement, and Fragments is a compelling new addition to his already impressive range. A blend of 70% Pinot Noir and 30% Chardonnay from chalk-rich Kimmeridgian soils, it is aged for 20 months on its lees.
The result is a Champagne of striking purity and precision. Aromas of ripe citrus, red apple and subtle florals lead into a palate that is taut, energetic and finely chiselled, underpinned by a distinctive mineral edge. The finish is clean, dry and refreshingly persistent.
Dosage: 5g/l (Extra-Brut)
Grapes are pressed in a traditional vertical Coquard press. The base wine is then aged in new demi-muids (20%) and stainless steel (80%).
The base wine is from the 2022 vintage and is blended with reserve wine from the 2021 and 2020 vintages.
