This Chablis comes from the father-son winemaking duo Camille and Laurent Schaller. Having joined the new wave of producers making exceptional quality Chablis from their family vineyards - rather than sell fruit to négociants - their Chablis comes from 30 year old Chardonnay vineyards. Planted on the best clay-limestone soils around the village of Préhy and Chablis, these sustainably farmed grapes yield a wine of exceptional finesse, minerality and purity.
On the palate, an exceedingly well-balanced wine with incredible minerality.
Pair alongside smoked salmon, served simply on brown bread with organic butter and a squeeze of lemon.
