WINERY HISTORY
Domaine Patrick Javillier began with the work of Patrick’s father, Raymond Javillier. Following the end of World War II, Raymond returned to the family’s ancestral holdings in Meursault, dedicating himself to the farming of 2ha of Chardonnay. A new era in the family’s history would be ushered in during 1974, when Patrick would assume control following the conclusion of his oenological studies. Over the next sixteen years, Patrick and his wife Catherine would dedicate themselves to slowly expanding the family’s holdings, acquiring plots across some of the Côte de Beaune’s most well-recognised sites. By 1990, he was ready to begin producing wines under his own label. Following decades at the head of the business, the next generation has largely taken control. Patrick’s son-in-law Pierre-Emmanuel Lamy helms white winemaking and viticulture, while his daughter Marion leads the charge with Pinot Noir.
VITICULTURE & WINEMAKING
Covering 11ha of the Côte de Beaune, the family produce Chardonnay from Meursault, Puligny-Montrachet, Savigny-lès-Beaune, Corton-Charlemagne, and Aloxe-Corton. While primarily known for their whites, they also produce Pinot Noir from Savigny-lès-Beaune, Aloxe-Corton, and Pernand-Vergelesses. Viticulture is performed with the utmost respect for the natural environment, aimed at balancing the goals of sustainability and quality.
In the winery, terroir expression is the foremost priority. The whites are sorted immediately after harvest and dispatched to the cellar for loading into a pneumatic press, after which they are transferred to casks for fermentation. This process is carried out entirely by natural yeasts, with full malolactic conversion occurring before aging sur lie in cask for 16-18 months. Reds undergo total destemming, before natural fermentation in concrete. Delicately balanced between richness and freshness, the wines of Javillier are simply breathtaking. Even more impressive, these results are produced with just one 1er Cru and Grand Cru holding apiece.
While Patrick is no longer dirtying his hands in the cellar day-and-night, the wines continue to reflect his essence. Mild mannered and gentle, yet with a noticeable personality, the wines of Domaine Javillier are not to be overlooked
