WINERY HISTORY
Domaine Daniel-Étienne Defaix (also known as Domaine du Vieux Château) is a true legend, arguably the oldest winegrowing estate in Chablis, with origins tracing back to 1610. 14th generation Daniel-Étienne - now assisted by his son Paul-Étienne - manages approximately 30 hectares of prime vineyards rooted in Kimmeridgian limestone. When Daniel-Étienne took the helm in 1978, he rejected the modern trend toward early bottling, instead reviving his grandfather's method of ultra-extended aging. The estate is a radical outlier in the region: it purposefully holds back its premier crus for 8 to 12 years, releasing them only when they have achieved full maturity and peak drinking complexity.
VITICULTURE & WINEMAKING
All vineyards are farmed organically, while high-density plantings naturally restrict yields and encourage deep root growth. The winemaking style is highly distinctive: oak barrels are completely avoided in favour of stainless-steel tanks, protecting Chablis' classic, laser-like mineral purity. Fermentations start slowly and spontaneously, using only indigenous yeasts, while malolactic fermentation can take up to two years to complete in their frigid cellars. No sulphur dioxide is added during the long vinification process; naturally produced carbon dioxide is used instead to preserve freshness. Crucially, the wines spend a staggering 18 to 36 months - sometimes much longer - resting undisturbed on their fine lees, before bottling. This painstaking yeast autolysis builds what Daniel-Étienne calls "the fat of the wine," imparting a generous, velvety texture that balances the searing natural acidity. Because of this incredibly slow natural settling, the wines are bottled without fining or filtration, capturing the raw, genuine soul of Chablis.
Their core selection begins with the superb Chablis "Vieilles Vignes", an old-vine village cuvée aged up to three years in tank, offering a cool, finely etched profile of green apple, wet stone, and sea breeze. Among the historic premier crus, the Chablis 1er Cru "Les Lys" is a pure, elegant and chiselled wine with aromas of white flowers, wet stone and lemon peel, and intense minerality. The Chablis 1er Cru "Vaillon" comes strictly from the historic heart of the vineyard, prior to its modern expansion, offering a rounder, softer, more approachable palate layered with ripe citrus. Their Chablis 1er Cru "Côte de Léchet" comes from an ultra-steep, sunny slope considered a Grand Cru site in the Middle Ages, delivering an intensely concentrated, powerful wine with notes of flint, oyster shell, and profound tertiary complexity from its decade-long cellar rest.
