The Morin family has farmed around Bué - one of Sancerre’s most distinguished villages - for generations, gradually expanding the estate from 1.5 hectares to 10 hectares of biodynamically farmed vines on some of the finest sites in the region.
Beyond Sauvignon Blanc, the estate also produces Pinot Noir from clay-rich sites. This single-vineyard Sancerre Rouge is made from fruit grown in a tiny 0.31-hectare plot in the acclaimed lieu-dit Bellechaume, a southwest-facing site in the village of Bué.
Made in a Burgundian style - a product of Pierre's training at Domaine Dujac - this wine is medium bodied, packed with ripe black cherry and raspberry fruit and gentle spicy notes - from whole bunch inclusion - balanced by appealing minerality. Supple and agile on the palate, yet showing structure and concentration. A moreish detour from your usual red Burgundy.
The wine is whole-bunch fermented with native yeasts and gently macerated for up to a month. It's then matured for 12 months in a combination of used 228l and 500l barrels, and further 12 months in stainless-steel vats. Bottled unfined and with only a coarse filtration to retain texture.
