Vino pH Piekenierskloof Palomino 2023

Vino pH is the collaborative project of Pauline Roux and Hanneke Krüger, two winemakers who met while working in the Paardeberg. Primarily seeking out unloved and long forgotten parcels, this wine is a rare find, as the vast majority of Palomino in South Africa is dedicated to brandy production. Sourced from a dry-farmed, high-altitude vineyard planted in 1968, the grapes were hand-harvested and fermented spontaneously after a short three-day maceration on skins. Fermentation and an 11-month ageing took place in old French puncheons, including a retired sherry cask. The nose is subtle but inviting, while the palate is lithe and savoury with a gently oily texture, soft acidity, and a saline finish thanks to the influence of coastal air. In short, a distinctly South African white wine of nuance and place.
