Assyrtiko thrives in this setting, expressing a different side to its Santorini origins - trading volcanic intensity for bright, mountain-driven freshness.\u003c\/p\u003e\n\u003cp\u003e\u003cem\u003eAn intriguing, gently smoky nose leads with yellow apple, lemon pith, dried herbs and subtle leesy notes. On the palate, it's full-bodied, textural and structured, yet remains agile and zippy thanks to Assyrtiko’s hallmark acidity. The finish is saline and lightly savoury, with delicate, appetising bitters.
